Kashmiri Chai is an exotic Green tea based, spicy tea that is popular in the Himalayan regions of China, Pakistan, India and Nepal.Most noted to be know as "Pink Tea", the district colour is obtained when a pinch of baking soda is added tea upon brewing.So take out your saucepan or Samovar and start brewing this spicy, nutty flavoured tea.Can be consumed with milk or without.

Method: Add two cups of water to 2 tsp full of tea and a pinch of baking soda. Let the mixture simmer and boil for about 20 minutes until the water is reduced to half. Now add 2 cups of cold water while the brew is boiling. Stir the mixture. After adding water, let it simmer for another 5 to 10 minutes. On another stove top, warm some milk and you can add some more cardamom pods. Stir and add the mixture to the warm milk. At this time, you may add sugar and a pinch of salt, or only salt, or only sugar. Let it boil further.Rememebr, the more you boil, the stronger the tea will be.Pour the tea into warm cups and add crushed dry fruits to enjoy!
